The Variation Monster plugin allows you to configure the image size for the Quick Cart Carousel. You can choose from any of the default image sizes provided by WooCommerce and WordPress, and easily select your preferred option from the settings panel.
In the image below, the carousel is using the thumbnail image size.
In the image below, the carousel is using the large image size.
