Variation Monster allows you to set a custom separator for selected attribute labels.
You can choose any symbol such as =, :, -, or anything else to separate the attribute name and its value.

Below is an image showing how you can set your preferred separator.

Once you select a separator, it will be displayed on your single product page along with the selected attribute.
